Turmeric Roasted Cauliflower and Butter Beans

Cauliflower and butter beans get roasted hard with turmeric, cumin, and black pepper until the edges catch and darken, then dressed in lemon tahini while everything's still warm enough to drink it in.

Why it works

Turmeric shows up here with black pepper on purpose, not by accident. Curcumin is barely absorbed on its own, and the piperine in pepper slows down how fast your gut wall and liver break it apart, which raises how much makes it into your blood by a wide margin. Roasting it in fat helps for the same reason, since curcumin is fat soluble. Cauliflower brings glucosinolates, which break down into isothiocyanates with their own inflammatory-signaling data behind them, and butter beans bring soluble fiber that feeds the gut bacteria producing short-chain fatty acids, a slower and more roundabout route to the same place. Roasting it hot and dressing it warm is a technique call, not a nutrition one. A warm bean drinks up dressing. A cold one just wears it.

Evidence

Curcumin trials for inflammatory markers and knee osteoarthritis pain are mostly small, mostly short, and mostly built on extract doses way above anything a meal delivers. The piperine interaction, though, is well documented in pharmacokinetic work, no argument there. Treat the culinary version here as a good habit with a plausible mechanism behind it, not a dose of anything you could measure.

Ingredients

  • 1 large cauliflower, broken into small florets
  • 2 x 400 g tins butter beans, drained and rinsed
  • 3 tbsp extra-virgin olive oil
  • 2 tsp ground turmeric
  • 2 tsp ground cumin
  • 1 tsp freshly ground black pepper
  • 3 tbsp tahini
  • 1 lemon, juiced
  • 1 garlic clove, crushed
  • 100 g baby spinach
  • A handful parsley, chopped

Method

  1. Heat the oven to 220C. Toss the cauliflower and butter beans with the olive oil, turmeric, cumin and black pepper and spread across two trays.
  2. Crowding one tray steams everything. Two trays with space is the difference between roasted and stewed.
  3. Roast for 30 to 35 minutes, turning once, until the cauliflower has dark edges and the beans have split and crisped.
  4. Whisk the tahini, lemon juice, garlic and three tablespoons of water into a pourable dressing. It will seize before it loosens; keep going.
  5. Fold the spinach through the hot trays so it wilts, then pour the dressing over while everything is still warm.
  6. Cool within two hours and portion. Parsley at the table.
