Beetroot, Black Bean and Pumpkin Seed Chili

Black beans and grated beetroot go into the slow cooker with chipotle and cocoa and come out dark, sweet, and deeply savory, finished with toasted pumpkin seeds for the zinc.

Why it works

Beetroot is one of the densest dietary sources of inorganic nitrate there is. Oral bacteria reduce it to nitrite, and your body converts that onward to nitric oxide, the signaling molecule that relaxes vascular smooth muscle. That's the same pathway erectile drugs act on further downstream, and it governs blood flow everywhere in your body, not just in one place. Pumpkin seeds carry zinc, which your body needs for testosterone synthesis, and it's deficiency, not excess, that shows up in the evidence here. Cocoa adds flavanols with their own modest endothelial-function data. None of this replaces asking why blood flow changed in the first place, which is frequently the more useful question.

Evidence

Dietary nitrate raising nitric oxide availability and modestly lowering blood pressure has good trial support. The step from there to sexual function is inference from shared mechanism, not direct evidence, and the zinc case applies to correcting a deficiency rather than topping up normal intake. Erectile difficulty is often the first visible sign of vascular disease, so it's worth a conversation with a clinician, not just a dietary fix.

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 3 medium raw beetroot, peeled and coarsely grated
  • 1 red pepper, diced
  • 2 chipotle chillies in adobo, chopped
  • 1 tbsp ground cumin
  • 1 tbsp unsweetened cocoa powder
  • 2 x 400 g tins black beans, drained and rinsed
  • 400 g tin chopped tomatoes
  • 400 ml low-sodium vegetable stock
  • 80 g pumpkin seeds, toasted, to serve
  • 1 lime, cut into wedges

Method

  1. Put the oil, onion, garlic, beetroot, red pepper, chipotle, cumin and cocoa into the slow cooker and stir to coat everything.
  2. Add the black beans, tomatoes and stock and stir well.
  3. Cook on low for six hours or on high for three, until the beetroot has softened into the sauce and the colour has gone from bright to deep.
  4. Taste. Cocoa and beetroot both push sweet, so it will want lime and salt to come back into balance.
  5. Cool within two hours and portion. Toast the pumpkin seeds in a dry pan and add them at the table with a lime wedge.
