Korean Beef Bulgogi Bowls with Brown Rice and Quick Pickles
Bulgogi-style ground beef glazed in a sweet-savory sauce over brown rice, packed into four boxes with a quick vinegar pickle of cucumber, carrot, and radish.

Ingredients
- 280 g (1½ cups) brown rice, rinsed
- 700 g (1½ lb) lean ground beef (90% lean)
- 3 tbsp low-sodium soy sauce or tamari
- 2 tbsp brown sugar
- 1 tbsp toasted sesame oil
- 4 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 2 tsp gochujang (optional)
- 4 scallions, thinly sliced, divided
- 1 English cucumber, thinly sliced
- 2 carrots, julienned
- 4 radishes, thinly sliced
- ½ cup rice vinegar
- ½ cup water
- 2 tbsp granulated sugar
- 1 tsp salt
- 2 tsp toasted sesame seeds, for serving
Method
- Combine the rice vinegar, water, granulated sugar, and salt in a bowl and stir until dissolved. Add the cucumber, carrot, and radish, submerge them in the brine, and let sit at room temperature for at least 20 minutes while you cook everything else.
- Rinse the rice and combine it with 3 cups water in a saucepan. Bring to a boil, cover, reduce the heat to low, and simmer for 35 to 40 minutes until the water is absorbed and the rice is tender. Remove from the heat and let stand, covered, for 5 minutes, then fluff with a fork.
- While the rice cooks, whisk together the soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang, if using, in a small bowl.
- Heat a large skillet or wok over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook for 5 to 6 minutes until mostly browned. Drain off any excess fat.
- Pour the sauce over the beef, stir in half the scallions, and cook for 3 to 4 minutes more, until the sauce reduces to a glaze that coats the meat.
- Divide the rice and beef among four containers. Drain the pickled vegetables and add them alongside, keeping them in their own section if the container allows. Top with the remaining scallions and the sesame seeds.
