Black Bean, Pepita and Cacao Chili

Black beans, cacao, and pepitas cook down slow with smoked paprika and cinnamon into a magnesium-heavy pot for the weeks when cooking from scratch every evening just is not happening.

Why it works

Magnesium is the throughline here. Black beans, pumpkin seeds, and cacao are three of the densest plant sources of it, and magnesium is a cofactor in GABAergic signaling and in regulating the hypothalamic-pituitary-adrenal axis, the system that governs your cortisol response. Intake sits below the recommended level for a large share of adults, and stress itself increases how much magnesium you lose through urine, which turns the shortfall into its own feedback loop. The fiber load matters for a second reason: the gut bacteria that ferment it produce short-chain fatty acids, and the gut-brain literature on those is early but active. None of this treats anxiety. It feeds a nutrient a lot of stressed-out people are running short on.

Evidence

Magnesium supplementation trials for anxiety and stress are mixed and generally low quality, with the clearest signal showing up in people who were deficient to start with. Food sources are not the same as supplement doses. This dish is a good source of a nutrient plenty of people are short of, which is a far more modest claim than the internet usually makes for it.

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 large onion, chopped
  • 2 peppers, diced
  • 4 garlic cloves, minced
  • 1 tbsp smoked paprika
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 2 tbsp raw cacao powder
  • 3 x 400 g tins black beans, drained and rinsed
  • 400 g tin chopped tomatoes
  • 500 ml low-sodium vegetable stock
  • 100 g pumpkin seeds (pepitas), toasted
  • A small bunch cilantro
  • 1 lime, cut into wedges

Method

  1. Put the oil, onion, peppers, garlic, paprika, cumin, cinnamon and cacao into the slow cooker and stir until everything is coated.
  2. Add the beans, tomatoes and stock. Stir, and cook on low for six hours or on high for three.
  3. Crush a ladleful of the beans against the side of the pot near the end and stir it back in. That thickens the sauce without flour.
  4. Taste for salt and acid. Cacao without enough lime tastes flat rather than rich.
  5. Cool within two hours and portion. Toasted pepitas, cilantro and a lime wedge at the table.
