Frozen Berry, Walnut and Oat Yogurt Bark
Thick Greek yogurt spread thin and frozen solid with blueberries, raspberries, toasted oats, walnuts, and cinnamon, then snapped into cool, crunchy shards that eat like dessert.
Why it works
Walnuts bring alpha-linolenic acid, the plant version of omega-3, plus polyphenols that support healthier LDL and endothelial function. Oats add beta-glucan, the soluble fiber that binds cholesterol in your gut before it gets anywhere near your bloodstream. Mixed berries add anthocyanin polyphenols, tied to lower blood pressure and more flexible arteries. And the Greek yogurt base does the real swap: protein and potassium in, refined-carb sugary snacks out, no added salt required. Sweetness comes mostly from the fruit and a touch of honey, not a spoon of sugar.

Ingredients
- 1.5 cups plain nonfat or 2% Greek yogurt
- 2 tsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup mixed fresh or frozen blueberries and raspberries
- 1/4 cup chopped walnuts
- 3 tbsp rolled oats, lightly toasted
- 1/4 tsp ground cinnamon
Method
- Line a small sheet pan or plate with parchment paper.
- Stir the Greek yogurt together with the honey, vanilla, and cinnamon, then spread it about 1/4 inch thick over the parchment.
- Scatter the berries, toasted oats, and chopped walnuts evenly across the surface and press them in lightly.
- Freeze for at least 3 hours until solid, then break into shards and serve straight from the freezer; store the rest frozen in an airtight container.
