Walnut, Berry and Chia Overnight Oats with Kefir
Creamy no-cook oats, soaked overnight in kefir with chia, topped with walnuts and a tumble of blueberries and strawberries. Set it before bed and forget about it.
Why it works
Rolled oats supply beta-glucan, a viscous soluble fiber that goes to work lowering LDL cholesterol. Chia and walnuts add plant omega-3 alpha-linolenic acid, tied to reduced cardiovascular and all-cause mortality. Blueberries and strawberries are dense with anthocyanins, polyphenols associated with slower cognitive decline and better vascular function. Ingredients
- 1/2 cup (50 g) rolled oats
- 1 tbsp (15 g) chia seeds
- 200 ml plain low-fat kefir (or unsweetened milk of choice)
- 20 g walnut halves, roughly chopped
- 1/2 cup (80 g) blueberries
- 4 medium strawberries (about 60 g), sliced
- 1/4 tsp ground cinnamon
- 1 tsp honey (optional)
Method
- In a jar or bowl, stir together the oats, chia seeds, cinnamon, and kefir until evenly combined.
- Cover and refrigerate overnight, or at least 4 hours, until thick and spoonable.
- In the morning, stir the oats and loosen with a splash more kefir or milk if needed.
- Top with the walnuts, blueberries, and sliced strawberries, and drizzle with honey if using.
