  • 1 cup (200 g) dried red lentils, rinsed
  • 1 medium sweet potato, cut into 2 cm cubes
  • 2 cups (180 g) purple cabbage, cut into wedges
  • 1 red onion, cut into wedges
  • 2 carrots, cut into batons
  • 1 cup (150 g) cherry tomatoes
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 teaspoon ground turmeric
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 lemon, juiced
  • 1/2 cup (15 g) fresh parsley, chopped
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Method

  1. Heat the oven to 425 F (220 C). Toss the sweet potato, cabbage, red onion, carrots, and cherry tomatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, and the black pepper on a large sheet pan.
  2. Roast for 30 to 35 minutes, turning once halfway, until the edges are caramelized and the sweet potato is tender.
  3. Meanwhile, warm the remaining 1 tablespoon olive oil in a saucepan over medium heat and cook the garlic, ginger, turmeric, and cumin for about 1 minute, until fragrant.
  4. Add the rinsed lentils and 2 1/2 cups water, bring to a simmer, and cook for 18 to 20 minutes, stirring occasionally, until soft and thickened. Season with the remaining 1/4 teaspoon salt.
  5. Spoon the turmeric lentils onto plates and pile the roasted vegetables on top.
  6. Finish with a squeeze of lemon and a scatter of fresh parsley.
