South Indian Beetroot Poriyal with Spinach Dal and Pumpkin-Seed Chutney
A warming South Indian plate: a bright beetroot-and-coconut poriyal, a garlicky spinach-and-red-lentil dal, and a zinc-rich roasted pumpkin-seed chutney, served over brown rice. Layered spice doing double duty for circulation and hormones.
Why it works

Ingredients
- 1/2 cup (100 g) red lentils (masoor dal), rinsed
- 3 cups (90 g) fresh spinach, roughly chopped
- 2 medium beets (about 300 g), peeled and finely diced
- 1/2 cup (100 g) uncooked brown basmati rice
- 3 tbsp desiccated unsweetened coconut
- 4 tbsp raw pumpkin seeds (pepitas)
- 3 garlic cloves (2 for dal, 1 for chutney)
- 1-inch piece ginger, grated
- 1 tsp ground turmeric
- 1 tsp cumin seeds
- 1 tsp black mustard seeds
- 8 fresh curry leaves (optional)
- 1 green chili, slit
- 1 small tomato, chopped
- 2 tbsp coconut oil
- Juice of 1/2 lemon
- Salt to taste
Method
- Cook the brown basmati rice in salted water until tender, about 25 minutes, and keep warm.
- For the dal, simmer the red lentils with the grated ginger, 1/2 tsp turmeric, and 1.5 cups water for about 15 minutes until soft. Stir in the chopped spinach and cook 3 minutes more until wilted. In a small pan, heat 1 tbsp coconut oil, add cumin seeds and 2 minced garlic cloves, cook until fragrant, add the tomato, and simmer 2 minutes, then stir this tempering into the dal with salt.
- For the poriyal, heat 1 tbsp coconut oil in a skillet, splutter the mustard seeds, then add curry leaves, green chili, and the remaining 1/2 tsp turmeric. Add the diced beets and 3 tbsp water, cover, and cook 10 to 12 minutes until tender. Stir in the desiccated coconut and a squeeze of lemon; season with salt.
- For the chutney, dry-toast the pumpkin seeds until golden, then blend with the remaining garlic clove, a splash of water, the rest of the lemon juice, and a pinch of salt into a coarse paste.
- Divide the brown rice between two plates and serve the spinach dal, beetroot poriyal, and pumpkin-seed chutney alongside.
- Finish with an extra squeeze of lemon over the beets to brighten and season everything to taste.
