Why it works

Ingredients

  • 3/4 cup (170g) low-fat 2% cottage cheese
  • 1 tbsp (12g) chia seeds
  • 1/2 cup (75g) mixed fresh raspberries and blueberries
  • 1 tsp honey
  • 1/4 tsp ground cinnamon
  • 2 tbsp water or milk (to loosen the chia, optional)

Method

  1. Stir the chia seeds into the 2 tbsp water or milk and let sit for 5-10 minutes until they form a soft gel.
  2. Meanwhile, blend or whisk the cottage cheese vigorously until smooth, airy, and whipped, about 60 seconds in a small blender.
  3. Spoon the whipped cottage cheese into a bowl and layer the chia gel over one side.
  4. Top with the fresh berries, dust with cinnamon, and drizzle the honey over everything.
  5. Serve chilled, eaten slowly to let the chia and casein register fullness.
