Spiced Roasted Chickpeas, for Scattering
Chickpeas roasted with smoked paprika and cumin until properly crisp, built for eating by the handful or scattering over anything that needs the crunch.
Why it works
Every stored meal turns soft, and softness gets monotonous fast. A crunchy element restores contrast to a bowl that's spent four days in the fridge, and this is the most useful one to keep on hand. Getting them genuinely crisp, not just dry, comes down to two things: drying the chickpeas thoroughly before they go in, since surface water steams them, and leaving them alone for the full forty minutes. Nutritionally they bring fiber and plant protein along with the polyphenols in the spices, and smoked paprika in particular carries carotenoids. They go soft the moment they're stored with anything wet, so they live in their own jar and go on at serving, not before.
Legume intake has consistent cohort support for cardiovascular and metabolic outcomes. Roasting only reduces water content. It doesn't meaningfully touch the fiber or protein.
Ingredients
- 2 × 400 g tins chickpeas, drained, rinsed, and dried very thoroughly
- 1.5 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp fine salt
Method
- Heat the oven to 200C. Dry the chickpeas properly, rolling them in a clean towel until no moisture is left. Any surface water steams them and they will never crisp.
- Toss with the oil only, and roast for 30 minutes without touching them.
- Add the spices and salt now rather than at the start, toss, and return for 8 to 10 minutes. Spices added at the beginning burn over forty minutes.
- Cool completely on the tray. They crisp further as they cool, and warm ones sealed in a jar go soft.
- Store in a jar at room temperature with the lid loose. Airtight traps residual moisture.
