Vanilla Chia Pudding Jars with Berry Compote
Five jars of chia set overnight in vanilla kefir, with a quick berry compote spooned on top the morning you eat it.
Why it works
Chia is unusually rich in soluble fiber, and the gel it forms is the mechanism rather than a texture quirk: it slows gastric emptying, which flattens the glucose curve and keeps you full. Ten grams of fiber before nine in the morning is a substantial head start on a daily target most people miss by half. The seeds also carry ALA, the plant omega-3, and unlike flax they do not need grinding, since their coat is thin enough to digest whole. Kefir contributes live cultures and enough protein to make this a breakfast rather than a pudding. The compote is cooked separately and added at serving so the fruit does not bleed into the base and turn everything grey by Wednesday.
Soluble fiber has consistent trial support for post-meal glucose and satiety. Higher fiber intake is among the more reliable predictors of long-term cardiovascular and digestive outcomes in cohort data.
Ingredients
- 90 g (about 9 tbsp) chia seeds
- 750 ml plain kefir
- 2 tsp vanilla extract
- 1 tbsp maple syrup, optional
- 300 g frozen mixed berries
- 1 tbsp lemon juice
- 40 g flaked almonds, toasted
Method
- Whisk the chia, kefir, vanilla, and maple syrup together in a jug and leave for ten minutes.
- Whisk again hard. This second whisk is what breaks up the clumps that otherwise set into lumps overnight.
- Divide between five jars, seal, and refrigerate at least four hours or overnight.
- For the compote, simmer the berries with the lemon juice for five minutes until they collapse and thicken slightly. Cool and store separately.
- Spoon compote and almonds over a jar as you eat it, not before.
