- 150 g (3/4 cup) white quinoa, rinsed well
- 500 ml (2 cups) water
- 1 large ripe banana, mashed (about 120 g)

- 2 tbsp ground flaxseed
- 120 g (1 cup) fresh blueberries
- 20 g (2 tbsp) pumpkin seeds, toasted
- 2 tsp pure maple syrup
- 1 pinch fine sea salt
Method
- Combine the rinsed quinoa, water, and salt in a small saucepan; bring to a boil, then cover and simmer gently for 12 to 15 minutes until the grains are tender and the liquid is absorbed.
- Stir the mashed banana, cinnamon, and ground flaxseed into the hot quinoa and cook uncovered for 1 to 2 minutes until creamy and thickened.
- Meanwhile, toast the pumpkin seeds in a dry skillet over medium heat for 2 to 3 minutes, shaking often, until fragrant and lightly golden.
- Spoon the porridge into two bowls and top with blueberries and toasted pumpkin seeds.
- Finish each bowl with a thread of maple syrup and serve warm, while it's still creamy.
