Grains and legumes get better, greens do not
Starch keeps absorbing liquid, which is why a chilli or a lentil curry is genuinely improved on day three: the sauce thickens and the spice settles. Cooked leafy greens go the other way within a day, so the recipes that need something green add it at the end.
Cool it fast, and keep the crisp thing separate
Spreading hot grains on a tray to cool takes two minutes and is the difference between separate grains and a solid block.
